Breakfast martini

Serves 4

This is a total waste utilisation brunch or pre-dinner martini with a good use of the marmalade you will have seen in last weeks’ column using the orange skins after juicing. I am using Black Cow vodka which is made from the whey of the milk that normally goes down the drain, so you have the perfect conscious-free drink.

Bring the marmalade out to room temperature or stand it in a bowl of boiling water if it’s quite solid, adding a little water or some of the vodka as you don’t want it going solid in the cocktail shaker.
